Combining science lab with Michelin three-star menus, Ultraviolet is a high-concept single-table restaurant. Dispensing with à la carte – a constraint Pairet believes impairs results – the chef precisely monitors the timing of courses, to deliver a 20-course fixed menu that is experimental as it comes. The ‘avant-garde figurative’ dishes – served at a secret location in a sleek, neon-lit steel bunker on the edge of the city – blend ambition with illusion. A scallop from Liaoning province paired with sea urchin might come in a shell that appears to be meringue but is actually a frozen lemon-seawater cocktail, with a video of the open sea projected onto the wall to accompany.
