Having launched a successful collaboration with New York-based chef Gray Kunz at The Upper House hotel in Hong Kong, the Shanghai branch of Café Gray Deluxe at The Middle House continues to meld Western classics with Asian flavours. This charming crescent-moon shaped venue has a sprawling terrace and sunset views. While Kunz has consulted on the menu, the kitchen team is led by chef de cuisine Peter Lin, who oversees the artful and modern European dishes, some with Asian ingredients to gently twist the well-known staples. Think classics such as heirloom tomatoes and burrata or steak tartare with gaufrette and homemade ‘Kunz ketchup’.
