For interactive dining of the highest calibre, Shanghai’s Taian Table demands a visit. Opened in 2016 by acclaimed German chef Stefan Stiller, who heads up a tight and talented brigade, the creative cuisine is enhanced by the experience of watching the chefs in action from the vantage point of a counter surrounding the kitchen. The offering comprises a selection of 10-, 12- and 14-course set menus, with a seasonal core menu that changes every six-to-eight weeks. Dishes see European classics given added Asian finesse: think sea urchin on brown butter sourdough; baby squid with tomato consommé; and foie gras snow with lychee and riesling jelly. Expect a strong wine list, dazzling array of amuse bouches, sorbet palate cleansers and your choice of artisanal chocolates before you (reluctantly) depart.
